Chris Morrison's Banana Muffins





I love a good muffin and these easy to bake banana and choc chip variations are the perfect snack for almost any relaxed social occasion – the banana of course means they are super healthy!

Ingredients

2 cups of white flour
4 tsp baking powder
3/4 cup Fairtrade sugar (brown or natural)
125g whittakers Fairtrade milk chocolate (chopped into chunks as big or as small as you fancy)
2 Fairtrade bananas (mashed)
1 egg
50g butter (melted)
3/4 cup milk
2 tbsps yogurt
 
Makes 12 normal sized muffins


Method

Preheat oven to 180 degrees bake
 
Sift flour and baking powder together and mix in sugar and the chunks of chocolate
 
Melt the butter, then add the mashed banana to the butter with milk and yogurt. Lightly beat the egg and add it into the wet mixture.
 
Gently mix the wet ingredients with the dry ingredients until combined
 
Grease muffin tins with a little bit of butter. Then dollop the mix into the tins. If you have any spare, place a square of Whittakers chocolate on top of each muffin
 
Bake for 15-20 minutes or until golden and bouncing back when pressed.
