Jono Clarke's Celery, fennel and parsley salad

As the weather warms up everyone seems to want to lighten the diet after all the winter comfort foods. This salad uses really strong flavours and crunchy textures to deliver a taste and textural delight - and with these ingredients, the fresher is always the better!


2 cups rough chopped flat leaf parsley
4 sticks celery

1 fist sized bulb fennel

Juice of 2 lemons
60 mls extra virgin olive oil
Salt and pepper


Wash all the ingredients, finely slice the fennel and celery. Toss all the ingredients together and check the seasoning. Fantastic with some grilled fish, squid or chicken.
