Also known as "Lamb's Lettuce" the young leaves in the centre of the plant usually taste sweetest and freshest. Historically classed as a weed known as Lamb's Lettuce - this could be because it generally appeared about the lambing season. The young leaves in spring and autumn are particularly tasty - a great addition to salad mixes or eaten on their own.
