2 perfectly ripe avocados
1 cup cooked peas
2 cloves of garlic
a large handful of mint, italian parsley and oregano
zest and juice of 2 lemons
a good drizzle of extra virgin olive oil
1/2 cup of pumpkin, sunflower seeds.
Toast the seeds in a dry skillet until fragrant. Set aside to cool slightly.
Add all of the ingredients in to a food processor and process for 30 seconds or so. I like mine quite chunky, the more rustic the better. Season to taste with sea salt and pepper.
