Pre heat the oven to 160 degrees.
Wash and halve the quinces lengthwise. cut out the core, but leave the skin on.
Butter a large baking dish and place quince halves in with the cut side facing upwards.
In the hole where the core was, put a knob of butter and a teaspoon of honey or brown sugar.
Pour about 1 centimetre of water into the dish , and cover the dish with tinfoil.
Bake the quinces in the oven for at least 2 hours, checking occasionally that the water hasnt dried up completely.
Eat when the quinces have gone deep red and very soft.
Whipped cream or creme fraiche is a nice accompaniment.
Quinces also are delicious stewed with apple and made into a crumble or fruit sponge.
