Jono Clarke's Lemon Delicious

This is my favourite warm lemon pudding, Light and fluffy, with the sponge like top and the zesty curd bottom always a crowd pleaser.


2 lemons

60g Butter

1.5 cups caster sugar

3 eggs separated

3 Tbsp. self rising flour
1.5 cups milk


Pre heat your oven to 180 and butter a 1 litre baking dish.
Zest one of your lemons and juice both of them.
Cream your butter and sugar with the zest in it. Add the egg yolks to this.
Then add half the flour and milk and mix and then repeat with the remaining flour and milk.
Now add the lemon juice and blend.
Whisk the egg whites until creamy and firm.
Gently fold together with main mixture. Pour into the baking dish and stand the dish in a larger baking dish and fill the larger one with hot water that comes a little over half way up the dish with the mix in it.
Bake for 45 - 50 minutes.
Serve with some runny cream
