4 sweetcorn, cooked and kernels sliced
1 cup Sunrice brown rice & barley mix*
1 red onion, diced
a large handful of fresh coriander, roughly chopped
a large handful of Italian parsley, roughly chopped
1 tsp chilli powder, or chilli flakes
a good glug of extra virgin olive oil juice of
2 limes
sea salt pepper
*The Sunrice mix is available in supermarkets nationwide.
Cook the brown rice & barley according to the manufacturers instructions, set aside to cool. Once cooled, toss with the remaining ingredients, and then season to taste with sea salt and ground pepper. Serves 4
