Fleur Sullivan's Rumble Thumps

‘Rumble Thumps’ is comfort food for me, it reminds me of Sunday nights when my whole family was together sitting around the fire and mum would make this sort of simple, heartening food. I have always said that when your mother makes you ‘Rumble thump’ you know she loves you…


Based on an old Scottish Recipe. Serves 4 to 6.

450grams potatoes.               
1 large onion sliced thin.
250grams finely sliced cabbage.
60 grams butter.                        
2/3 cup of grated cheese.            
salt and pepper to taste.
Garnish of any fresh herbs


Method: pre heat oven to about 180 centigrade

1/.    Cook your potatoes in cold water, bring to the boil, simmer uncovered until just tender, Remove from the range and strain through a sieve or colander, rinse under cold water drain, repeat and drain again.

2/.   Place potatoes in a bowl and mash coarsely with a fork.

3/.   Heat butter in a pan, add the onion, cook on a low heat until golden and soft. Add the cabbage stir for 5 minutes. Add the potatoes, salt and pepper. Remove from the heat stir in 1/3 of your cheese.

4/.   Transfer to an oiled baking dish sprinkle with your remaining cheese.  Bake for around 20 minutes.

5/.  Serve at the table in your oven dish with your choice of garden herbs sprinkled on top.
